How to bake a CARROT CAKE with Leila!

Carrot cake is one of my favorites! And on a not sunny sunday after-noon nothing beats baking a cake to put a smile on your loved one's face.
This recipe can also be used to bake carrot muffins but I so wanted to use my heart shaped LE CREUSET dish that I chose to bake the cake version.So here it is >

First > Ingredients :

*500 gr organic carrots
*2 large free range eggs
*120 gr caster organic sugar
*1 teaspoon bicarbonate of soda
*2 teaspoons baking powder
*250 gr self raising flour
*50 gr walnuts
*175 ml semi-skimmed organic milk
*50 gr unsalted butter


Then > What to do :

Preheat the oven to Gas Mark 5.


Sift the flour,


bicarbonate of soda,


salt,


baking powder and


sugar into a large bowl. Stir!


Cut the piece of butter and


and melt it in a pan, let it on the side.


Take your eggs and milk,



put them in a separate bowl with


the melted butter and stir. Leave on the side.


Grate the carrots!


Add the wet ingredients to the dry ingredients and


stir until just combined.


Add the walnuts.


Butter you dish.


Spoon mixture into your lovely dish and


ready to go in the oven!


Bake for 45 to 60 min.
Put the stick through the cake after 45 min and if the end is still sticky then leave a bit longer.


And voilà!


To enjoy with your loved ones!!
